My family is really big on banana bread, probably because my husband and kids are not fans of ripe bananas :) I’ve made a lot of these breads over the years, experimenting with different combinations and this recipe is one of our favorites! Typically in the past, I’ve made banana bread with baking soda, then discovered the light, almost cakey texture that baking powder gives, so this recipe is entirely new. My husband’s family has a long standing tradition. His dad is German and one thing that’s a must every Christmas Eve is a dinner of waffles and sausage. We’re not talking any ol’ waffles and sausage. Can I just take a moment to say how excited I am that these cookies have come into my life? My hubby is a total cookie man and well, can you beat THREE ingredients?! I know I’m not the first person to make cookies this way, so while I’m not re-inventing the wheel here, I just had to pass it along for anyone looking for a cookie that is easy AND delish!
